I have taken many classes at Viking over the past few years and have never experienced anything like the past six weeks of Viking University. I can't say enough about how much fun I've had and how much I've taken away. I only wish I had a "Viking University II" to look forward to in a couple of weeks.
Each week, I looked forward to Chef Jamie's instruction and the interesting ways he helped us "get" what we needed to absorb from that week's lesson. I honestly believe I learned as much as I did because of Chef Jamie's broad culinary experience and his teaching style...
All in all, fantastic class! My only disappointment is it's over!

Thank you for the wonderful opportunity I had to visit your store and select the many Viking products for my prize at “Just A Pinch Recipe Club.” Everything I chose was so nice, and it has been so much fun experimenting with all the new equipment! Your sales staff was so helpful and I appreciate them taking the time to help me with the selections. Truly Viking cookware is the top of the line and I am so impressed with the quality. Viking was new to me and I am amazed at the difference in the appliances. When I redo my kitchen I have decided to replace my stovetop and oven with Viking. I very much enjoyed the recent Basic Knife Skills class with Chef Robert. It was a birthday present to myself having turned 60 on October 3 and I took the class on the 11th. I had hoped to learn how to actually sharpen my knives as that is one skill I did not pick up from my father or grandfather who could each shave the hair on their arms with their pocket knives just to show how sharp they could make them.
However, the rest of class was outstanding for the fundamentals of knife handling and skills. It was also reassuring that that the skills I had picked up on my own were mirrored throughout the instruction.
Practically every day I recall something that Chef Robert said and I turn around and tell my wife. Fortunately, she is a good listener and glad I enjoyed the class so much. Though the knife techniques will become an art form, I appreciated most the wisdom Chef Robert passed on to us. How to make chicken stock (beef, shrimp or lobster as well – and how long to cook the stock) and reducing it down by half, the skimming of the stock to clean it, etc is knowledge that I did not have and will use from now on. Roasting old spices to bring out their flavor was another item I took away. There are many other tidbits that were caught which I have now done or just waiting to try.
The young lady who assisted Chef Robert is a gem. Her personality fit well with him, her assistance with students could not have been better. I commend you for finding great people to teach and assist with beginning knife skills.
Though the school is three hours away, I hope I can take a few more classes throughout the next year.
Thank you for a great experience and the hospitality shown to us as students. You have set a high standard.
P.S. tonight I am deboning six chicken breasts without the use of a knife. Thanks Chef Robert for showing us how.

We absolutely loved our recent Pasta Party Private Event! Chef Colby is a saint. She was so good with the children – and the adults! The assistant Shannon was so very helpful also, preparing our mise en place so no finger tips were sacrificed. My oldest daughter told me it was great and her whole family had a wonderful time. My son now thinks he needs a pasta roller (Christmas is coming . . .) and my youngest daughter and her boyfriend both had a marvelous time as well. I made pictures of my husband actually making pasta sauce! It may never happen again, but it’s captured digitally for future generations.
In addition, the food we made was really tasty – I was surprised we had any to take home as much as I saw people eating! It made a welcome change from our turkey and ham leftovers. On Saturday more than one person asked if we had any pasta left over from Friday. By the time everyone left my house Saturday afternoon all the leftover pasta was gone but they all took their recipe packets to make more when they got home. It was most definitely a huge success.

We had a surprise guest and a surprise menu accommodation, all thrown at me during the event but your crew handled it with grace. Chef Carolyn and Jenn are great. The fact that Carolyn kept this group focused and on task is the new Music City Miracle. Pam could not have been more accommodating, she is simply amazing. She really did make everyone feel welcome and several people commented about her friendly hospitality. Our gang really did have a great time and for those who did not attend we have been sharing the secrets of the candied bacon with them.
